Healthy Recipe: Oatmeal with Fried Vegetable

Just another heartful way to start our day...

Hello Beauties!!! Last week, I blogged about 10 best foods for our heart. Of course, oatmeal is one of them. Right now, I will be sharing a very quick, tasty but different oatmeal recipe that sometime I prepare for our breakfast. So, let's jump direct into this recipe.

Ingredients
Oatmeal: 3Oz. (I used instant oatmeal for this recipe)
Veggies: 3 1/2 cups of your choice (I used carrot, red pepper, spring onion, onion, cauliflower)
Cooking oil: 1 Tbsp, I used olive oil (I always do)
Salt: to taste
Black Pepper: to taste (freshly ground)
White Vinegar: 1 tsp/ to taste
Water: 1 cup (room temp)
Green chili: Optional
Ground Cinnamon: Optional

Instruction
Chop all veggies into small cubes.

Pour oil in a pan, wait until it is hot; next, add all the vegetables and fry them
Tip: if you are using onion, add onion into hot oil first. After cooking for few minutes, add other veggies.

After frying veggies for 10-12 minutes on medium heat (or, until they are crispy and tender), add oatmeal. Before you add oatmeal, quickly soak it into room temp water (for may be 5-10 seconds). Drain water immediately.

Next, mix veggies and oatmeal very well while frying them together.
After mixing, add salt, freshly ground black pepper and vinegar to your taste and mix up everything together. Add a pinch of ground cinnamon after you turn off the heat.

And, Done! Serve it right away...

Happy and healthy February to all of us! Please let us know your way of healthy cooking. I love to try new recipes.
XOXO
