Roasted Salmon with Indian Spices: A step by step Recipe

Hello Beauties!!! 
Can you believe it is already 2014. They say time flies, and it sure does!  
So, Happy New Year!!!
Hopefully, you all had memorable ones on the last day of 2013 and the first day of 2014. 
I had a party on 31st at a friend's place and spent the whole day with my family on 1st. 
Well, doc was working on the both days as usual. Anyway, I should not complain, because he had a few days off during Christmas time and we had really great time together.

Wishing someone with sweets is a universal tradition. Personally, I am not a big sweet lover, I like it Spicyyy! Many of my friends asked me about a spicy recipe with fish. 
Therefore, this is the best time to share my secret recipe!







Ingredients


Salmon fillet: 4 pieces or around 2 Lb
Olive Oil: 1 tbsp 
Ginger paste: 1 1/2 tbsp
Garlic Paste: 1 1/2 tbsp
Ground turmeric: 1 tsp
Paprika: 1 tsp
Ground cumin: 1 tsp
Ground coriander: 1 tsp
Ground Cinnamon: 1 tsp
Freshly ground black pepper: 1/2 tsp or to taste
Balsamic vinegar: 1/4 cup
Freshly squeezed lemon juice:
Fresh coriander leaves: to taste (Optional)
Salt: to taste
Tip: Freshly ground spices are always better than store bought ones.


Instruction:

Get ready with the salmon. Wash, clean do whatever needed. (Tip: try to choose pieces which are not very thick for this recipe to absorb the spices evenly.)

Sprinkle black pepper and salt on top of salmon fillet.


Take all the spices in a bowl including salt, oil, balsamic vinegar, and ginger and garlic paste.

Mix properly.

Mixture should look something like the picture above.

Marinade the fish. 

Add lemon juice on top. Keep it as it is for an hour. 

 Next, keep the fish skin side up (means flesh side down).

Wrap it and refrigerate for at least 4-5 hours. Honestly, keeping it in freeze overnight gives you the best possible taste.

Now it is roasting time. Spread aluminum foil on roasting pan. Spread a thin layer of oil all over (make sure a very thin layer, not too much oil).

Pre-heat the oven at 375 degree. Roast for at-least 20 minutes. Check time to time. Take it out according to your preference. I always like it very well cook. It takes me around 25-30 minutes. At the end, I keep the oven temperature much higher (425-450 degree) for at least 5-10 minutes to roast the top layer even more. That's again my personal preference. 

Done.

Serve with greek salad and red Wine.
